Christina was kind enough to let me guest post today for her while she is taking a little blogging vacation. Christina is such a sweet soul and I’m lucky to have her as a blogging friend. Like her, I value a healthy lifestyle. I love finding ways to turn my favorite recipes, (macaroni and cheese anyone?) into healthier versions. This can usually be done by substituting one or two ingredients with healthier, more natural options.
Today I’d like to share with you a super low in fat and healthy Chocolate Chip Muffin recipe.
I’m a chocolate girl. When I’m stressed I always find myself reaching for chocolate. However, I do not allow myself to keep any cookies, cakes, or other fattening pastries in the house. I keep a bag of semi sweet morsels in the house at all time, and like to enjoy a small handful with popcorn or pretzels every now and again. Yet, some times you just NEED cake! No worries, you can have your cake and eat it too!
This recipe satisfies that craving while making sure you’re not over-doing it on the fat and calories. If you have ever participated in Weight Watchers, these little muffins are only 2 pt each! The perfect little snack, breakfast treat, or dessert. Plus they are SO easy to make and only have 4 ingredients.
Healthy Chocolate Chip Muffins
Prep Time: 10 Min
Cook Time: 20 Min
Makes 36 mini muffins
1 box of sugar-free cake mix
1 can of pumpkin puree
1 tbsp of instant coffee
1/2 cup of semi sweet chocolate chips (optional)
Pre-heat the oven to 350 degrees.
Mix the first three ingredients together. Add in the chocolate chips. The batter will be extremely thick. Scoop the batter (too thick to pour) into a mini muffin tin (if you wish you can make these as large muffins as well).
Bake for twenty minutes. And that’s it!
Satisfy your chocolate cravings.
Try not to eat all of the muffins in one day!

What would your last meal be?
Oh my…I think I’d want a smorgasboard! I’d start with an assortment of cheese, followed by nachos and pizza, followed by crab cakes, and end with a super large ice cream sundae with all my favorite toppings (peanuts, cereal, candy, crushed cookies, pretzles, whipped cream, and hot chocolate.
